Unlike many Calvados appellations that focus primarily on apples, Domfrontais regulations require a significant percentage of pears, which gives the spirit its lifted floral character and distinctive freshness.

Distilled from cider and perry before aging slowly in oak, the 2008 vintage shows both maturity and remarkable vibrancy. The nose opens with baked apple, poached pear, honey, orchard blossom, vanilla, and gentle spice layered over earthy cellar notes and toasted oak. On the palate, it is silky and nuanced with flavors of stewed orchard fruit, almond, caramel, baking spice, dried flowers, and subtle tannin carried by bright acidity and a graceful texture.
