De Barolo Cerretta van Mauro Sebaste past goed bij rood vlees of wildgerechten, maar ook uitstekend bij oude kazen.
De Cerretta is een historische Cru van Barolo. De wijngaard bevindt zich in het dorp Serralunga d'Alba. De ondergrond is Kalkhoudend en rijk aan ijzer. In oktober wordt alles met de hand geplukt en geselecteerd. Na de vinificatie rijpt de wijn 36 maanden in Franse vaten uit Allier van 400 liter. Na de nodige raffinage op vat, vindt een verdere verfijning op de fles plaats van minimaal 6 maanden.
