Dé klassieker voor de feestdagen. Deze gevulde kalkoen heeft een rijke hoeveelheid traditionele tutti-frutti vulling - gedroogde pruimen, abrikoos, appel en peer - met kalkoengehakt, knoflook, bladpeterselie en kerrie. De gevulde kalkoen is geschikt om met ongeveer 10 personen aan tafel te gaan als in een restaurant! De kalkoen is op de poten en vleugels na uitgebeend zodat u het gevogelte moeiteloos kunt aansnijden aan tafel. 

De Caringa Light Bronze kalkoen is langzaam groeiende soort die is geselecteerd op zijn traditionele smaak en niet op grootte. De kalkoenen hebben een fijn buitenleven gehad op Anton's boerderij in Rijkevoort. Hier lopen ze vrij rond in de wei en hebben een ruime stal om ’s avonds op stok te gaan. Ze krijgen alle tijd en ruimte om te groeien en een eenvoudig dieet van tarwe en alles dat ze tijdens het scharrelen tegenkomen. Dit alles zorgt voor sappig smaakvol vlees met een stevige textuur.

Bereidingsadvies

Laat de kalkoen minstens 1 dag ontdooien. Haal hem 1 uur van tevoren uit de koelkast en verpakking, dep droog en laat op kamertemperatuur komen. Verwarm de oven voor op 200 °C en zet de braadslee onderin om het vet op te vangen. Steek de thermometer tussen poot en borst, plaats de kalkoen boven de braadslee in de oven. Verlaag na 20 minuten de temperatuur naar 120 °C (deur eventueel kort open). Controleer de kerntemperatuur na 1 en 2 uur. Bedruip regelmatig met het braadvocht. Wordt de kalkoen te bruin? Dek af met folie. Na ca. 2,5 uur is de kalkoen perfect bij 75 °C. Komt er helder vocht uit bij het prikken, dan is hij gaar. Nog niet op temperatuur? Dek af en controleer elke 5 minuten. Laat de kalkoen 15 minuten rusten onder losse folie. Verwijder de vleugels en snijd dunne plakken van de borst. Serveer met de vulling.
